Three South African flavours to try at home
From chakalaka to pap and tomato relish, discover the flavours behind everyday South African tables.
Chakalaka is a spicy vegetable relish commonly enjoyed alongside pap, bread or braaied meat. Every household has its own version, so treat this as a flexible starting point rather than a definitive recipe.
For a simple version, soften a chopped onion and peppers in a little oil, add grated carrot, chopped tomatoes, a spoon of curry powder and a drained tin of baked beans. Simmer gently until the vegetables are tender; adjust the seasoning and chilli to taste.
Serve with warm pap, made by stirring maize meal into simmering water and cooking according to the packet instructions. Add a fresh tomato-and-onion relish for contrast.
When you travel, ask local restaurants and home cooks what they recommend; regional versions are part of the fun.
